Its official function is to protect humanity from the Angels.
But in reality, NERV obeys a more powerful hidden organization called SEELE, which has its own plan:
Human Complementation Project.
This project seeks to merge all human souls into a single consciousness, eliminating pain, fear, and loneliness.
The price: the total loss of individuality.
Gendo Ikari, the commander of NERV, uses this project for his own purposes: to reunite with his dead wife, using his son as a tool.

The EVAs are giant biomechanical units created by NERV.
They are not just simple robots:
They have a soul (in most cases, the soul of the pilot's mother).
They are created from the DNA of Adam or Lilith.
They are the only means capable of physically fighting an Angel.
The EVAs need a pilot who can mentally synchronize with them.
That synchronization can only be achieved by adolescents born after the Second Impact who have a specific compatibility (partly genetic, partly emotional).
That is why the pilots are always boys aged between 14 and 17.

The DSS Choker is an explosive safety device placed around the neck of certain Evangelion pilots.
It is shaped like a metallic ring tightly fitted around the neck, with a red light on the front.
"DSS" stands for Depth System Safeguard.

It acts like an implanted bomb that detonates automatically if the bearer becomes unstable or is at risk of causing an Impact (cataclysm).
Basically:
If the pilot loses control of the EVA,
or if the EVA begins to merge with an Angel or something divine,

💥 the collar explodes and instantly takes their head off.
There is no way to remove it without official authorization.

It is like a typical school class: they have classmates, a delegate, teachers, and normal social relationships... though everything gets complicated because some of them also pilot the EVAs and have to save the city.
